Enjoy this refreshing rhubarb juice recipe. As a bonus the rubarb is packed with A-, B- and C-Vitamins.
- 700 g Rhubarb
- 200 g sugar
- 1 l water
- 1 vanilla pod
- juice of one lemon
- Remove and discard the leaves on the rhubarb stalks. Do not peel. Wash and slice the rhubarb stalks into one inch pieces.
- Place rhubarb into a large pot along with the water, sugar and vanilla pod. Bring to boil, then cover and reduce the heat to a simmer for 20 minutes.
- Remove the vanilla pod and strain liquid through a fine mesh strainer into a bowl, pressing on the solids in the strainer to extract as much juice as possible.
- Add the lemon juice.
- Fill the juice into a clean bottle. Chill for a few hours.
Best served cold. Enjoy it on a warm Norwegian summer day (Average temperature in July is around 64°F in Oslo).
