Rhubarb juice



Enjoy this refreshing rhubarb juice recipe. As a bonus the rubarb is packed with A-, B- and C-Vitamins.

Ingredients:

  • 700 g Rhubarb
  • 200 g sugar
  • 1 l water
  • 1 vanilla pod
  • juice of one lemon

Directions:

  1.  Remove and discard the leaves on the rhubarb stalks. Do not peel. Wash and slice the rhubarb stalks into one inch pieces.
  2. Place rhubarb into a large pot along with the water, sugar and vanilla pod. Bring to boil, then cover and reduce the heat to a simmer for 20 minutes.
  3. Remove the vanilla pod and strain liquid through a fine mesh strainer into a bowl, pressing on the solids in the strainer to extract as much juice as possible.
  4. Add the lemon juice.
  5. Fill the juice into a clean bottle. Chill for a few hours.

Best served cold. Enjoy it on a warm Norwegian summer day (Average temperature in July is around 64°F in Oslo).
